Brewing philosophy : Here at DMB, I like to push the envelope of the(IMHO ) far too highly regulated art that is craft brewing. The Reinheitsgebot has had a very detrimental impact on the craft of brewing beer. It along with the BJCP have effectively neutered both production, small batch craft and homebrewers alike. Any deviation from these standards in style is highly frowned upon. To me, the only limitations should be the the ability and imagination of the brewer.The correct pairing of flavors and sometimes, the ability to achieve a flavor profile derived from something that has absolutely nothing to do with beer can produce an amazingly unique brew. If you’re one of the conditioned, traditional only brewers, do us both a favor and GTFO now!
